Nonna Angelina’s Pizza Siciliana

Ingredients
2 lbs pizza dough (make your own or purchase store bought)
5 Italian sausage links, take off casing and crumble
1 green pepper, diced
1 medium onion, diced
2 large potatoes, peeled and diced
1 tsp oregano
Salt and pepper to taste
Olive oil
½ to ¾ tsp red pepper flakes (optional)
1 to 1½ cups marinara sauce
1 cup mozzarella
⅓ cup parmigiano or pecorino, grated cheese
Directions
In frying pan with olive oil sauté potatoes; when they're half cooked add onion and peppers, cook till all vegetables are tender, season.
Fry the sausage separate till cooked, drain any excess fat and mix with vegetable mixture; add oregano and red pepper flakes, cook a few more minutes and remove from heat.
Roll out the pizza dough (1 lb per cookie sheet or round pizza pan) and grease the baking sheet.
On each pizza spread about ½ cup marinara sauce; top with half the sausage/vegetable mixture then half the mozzarella and parmigiano. Drizzle with olive oil.
Preheat oven to 425°F; bake pizzas about 20–25 minutes. The bottom should be golden and the top bubbly.
