Arancini (Sicilian Rice Balls)

Ingredients
1 cup rice (Mahatma rice works best)
3 oz grated Parmesan cheese
2 eggs
Salt & pepper to taste
2 tbsp plain bread crumbs
4 oz mozzarella, cut in 1 inch cubes
Breadcrumbs to coat
Oil for deep frying
Directions
Cook rice in boiling salted water until tender, about 20 minutes.
Drain thoroughly; add cheese, eggs, salt & pepper and breadcrumbs; mix well and let cool.
Take a good spoonful of rice and put it in your palm; press mozzarella cube in the center and
top with another spoonful of rice - form into a ball (size of a small orange).
Roll rice ball in breadcrumbs.
Deep fry in hot oil until golden brown. Drain on paper towels.
Serve with your favorite marinara sauce.
