Arancini (Sicilian Rice Balls)

Ingredients

  • 1 cup rice (Mahatma rice works best)

  • 3 oz grated Parmesan cheese

  • 2 eggs

  • Salt & pepper to taste

  • 2 tbsp plain bread crumbs

  • 4 oz mozzarella, cut in 1 inch cubes

  • Breadcrumbs to coat

  • Oil for deep frying

Directions

  1. Cook rice in boiling salted water until tender, about 20 minutes.

  2. Drain thoroughly; add cheese, eggs, salt & pepper and breadcrumbs; mix well and let cool.

  3. Take a good spoonful of rice and put it in your palm; press mozzarella cube in the center and

    top with another spoonful of rice - form into a ball (size of a small orange).

  4. Roll rice ball in breadcrumbs.

  5. Deep fry in hot oil until golden brown. Drain on paper towels.

  6. Serve with your favorite marinara sauce.
