Olga's Tiramisu

Ingredients
500 g ladyfinger cookies
1 lb mascarpone cheese
5 eggs
5 tbsp sugar
1 pot of espresso coffee
1 shot brandy (can substitute other liquor)
Grated chocolate or cocoa powder (approx. 2 tbsp)
Directions
Separate egg whites from yolks.
Mix sugar with egg yolks for 5 minutes until pale yellow; add mascarpone cheese. Fold together and set aside.
Whip egg whites until foamy and peaks form; fold into mascarpone mixture.
Let espresso cool, then add brandy.
Dip each ladyfinger in coffee and place into a 13×9 baking dish in a single layer.
Top with mascarpone mixture; continue layering cookies dipped in coffee and mascarpone mixture.
Last layer is mascarpone mixture (2 layers total).
Top with grated chocolate or powdered cocoa.
Refrigerate 4–5 hours before serving.
